For centuries, rice noodles have been a staple food in Asia. They are similar and are made with rice flour and water, and they can be gluten free, whereas some people cannot eat gluten, which is good. These wet noodles are used in a wide range of foods including soups, stir-fries, salads and more. People love them because they are different, are light to eat and soak up a lot of good flavors, from sauces to other ingredients.


The Art of Making Fresh Rice Noodles

The initial step in the production of rice noodles is selecting the appropriate type of rice. End raw rice is the best quality rice as they are the only ones not processed. Once we pick the rice, we soak it in the water for a couple of hours. Soaking the rice makes it soft and easier to handle. After soaking the rice, we grind the rice into a fine powder to make rice flour.

 

Then we knead the rice flour with just enough water, salt (and sometimes tapioca starch). This GYoung noodle making machine creates a soft, fluffy white dough. Once the dough is ready, we knead it enough to ensure it is smooth. After that, we roll it to flat sheets. When we get these sheets, we cut them into thin noodle-like strips. These noodle strips are good to go.
